Grilled Summer Veggies


This is one of my most favorite ways to use fresh zucchini from the garden! And it's so easy!

Cut zucchini, onion and red and green pepper into good size chunks. I usually add yellow squash, but we didn't have any at the time! Make an Italian dressing mix using a Good Seasons packet. Follow directions and add 2 tsp of sugar. Toss veggies in some of that, just giving it a good coat. Cook in iron skillet on the grill until done. I like mine a little crisp, so sometimes adding the zucchini in a little later helps it to not get too mushy.
