Pizzelles



My mom always made these when I was growing up. I loved when she made them for school parties. They were always such a hit with colored sprinkles on them. They are so different, and they make for a fancy dessert. This past weekend I shaped them like bowls and filled them with vanilla ice cream, topped with strawberries and a strawberry sauce I made. They were beauties, and delicious too!

You need to have a Pizzelle Iron to make these.

6 eggs
1 1/2 cups sugar
1 cup butter melted
3 cups flour
4 tsp baking powder
3 tsp vanilla
1 tsp lemon or almond flavoring

Beat eggs. Add sugar gradually. Beat until smooth. Add cooled melted butter and flavoring. Mix flour and baking powder. Add to egg mixture. Dough will be sticky enough to be dropped by a spoon. Make according to your iron's instructions. Sprinkle with powder sugar. If you want to make cute little bowls, just get them inside of a bowl and formed to the bowl as quickly as possible. Store in airtight container. Lovely!
