Chicken Taco


This is a very easy and yummy recipe my mom made when we were at home. It doesn't make a mess and it's a pretty frugal recipe!


3 chicken breasts, cut up into bite-size pieces
1 can diced tomatoes (you can use Rotel if you like spice!)
1 can corn, drained
1 can chicken broth
1 package of taco seasoning
1 1/2 cups instant rice
Black beans, drained and rinsed (optional)

Tortilla Chips
Shredded Cheese
Sour Cream

Cook chicken in skillet with a little oil. Add tomatoes, broth, corn and taco seasoning (and beans if you want those). Bring to a boil. Simmer about 15 min. Add rice. Cover and let sit until rice is cooked (instant rice directions). That's it!
Serve with tortilla chips, cheese and sour cream.
